Taco Mac and Cheese

This one-pot wonder is not only easy to make but also budget-friendly. Plus, the addition of black beans and diced tomatoes adds a healthy twist to this comfort food classic. Garnish it with a dollop of sour cream and a sprinkle of cilantro for a pop of freshness.

Ingredients

  • 1 lb 450g ground beef
  • 1 packet taco seasoning
  • 2 cups elbow macaroni
  • 1 can 14 oz diced tomatoes, drained
  • 1 can 15 oz black beans, rinsed and drained
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro optional, for garnish
  • Tortilla chips optional, for serving

Instructions

  • Cook the Pasta: Bring a large pot of salted water to a boil. Cook macaroni according to package instructions. Drain and set aside.
  • Cook the Beef: In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  • Season the Beef: Add taco seasoning and a splash of water to the beef, stirring until evenly coated. Cook for 2-3 minutes.
  • Combine Ingredients: Reduce heat to low. Add the diced tomatoes, black beans, cooked macaroni, milk, and shredded cheese to the skillet. Stir until the cheese melts and the mixture is creamy.
  • Finish and Serve: Stir in sour cream until well combined. Garnish with cilantro and serve with tortilla chips if desired.
