Ingredients

  • 4 whole lobsters medium-sized
  • 3 tablespoons truffle butter
  • 1 onion finely chopped
  • 2 garlic cloves minced
  • 1 carrot chopped
  • 1 celery stalk chopped
  • 3 tablespoons brandy
  • 4 cups seafood stock
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions

  • Prepare the Lobsters: Steam the lobsters until they are cooked. Remove the meat and set aside. Crush the shells and return them to the pot.
  • Cook the Vegetables: In a skillet, melt the truffle butter and sauté the onion, garlic, carrot, and celery until soft.
  • Deglaze: Add brandy to the skillet and scrape any browned bits off the bottom.
  • Simmer: Transfer the vegetable mixture to the pot with lobster shells. Add seafood stock and bring to a simmer. Cook for 30 minutes.
  • Blend and Strain: Remove the shells and blend the soup until smooth. Strain through a fine strainer.
  • Final Touches: Return the soup to the pot. Add heavy cream and simmer for an additional 10 minutes. Season with salt and pepper.
  • Serve: Garnish with fresh herbs and lobster meat.
