Ingredients

  • 1 pound elbow macaroni
  • 3 tablespoons butter
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 2 cups chopped kimchi preferably aged for stronger flavor
  • 3 tablespoons kimchi juice
  • 2 cups milk
  • 3 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Green onions and sesame seeds for garnish

Instructions

  • Cook the Macaroni: In a large pot of boiling salted water, cook the macaroni according to package instructions until al dente. Drain and set aside.
  • Prepare the Sauce: In the same pot, melt butter over medium heat. Add onions and garlic, cooking until softened. Stir in the chopped kimchi and cook for another 2 minutes.
  • Combine Ingredients: Add the kimchi juice and milk, bringing the mixture to a simmer. Gradually add in the cheddar and mozzarella cheeses, stirring until the cheese is melted and the sauce is smooth.
  • Mix with Macaroni: Add the cooked macaroni to the pot, stirring to coat the pasta evenly with the cheese sauce. Season with salt and pepper.
  • Serve: Serve hot, garnished with green onions and sesame seeds.
