There’s something magical about the aroma of a whole chicken roasting in the oven, and this Savory Garlic Herb Roasted Chicken recipe takes the experience to the next level. Ingredients

  • 1 whole chicken 4-5 lbs, giblets removed
  • 3 tbsp olive oil
  • 2 tsp McCormick Garlic Powder
  • 1 tsp McCormick Dried Thyme
  • 1 tsp McCormick Dried Rosemary
  • 1 tsp McCormick Paprika
  • 1 ½ tsp salt
  • ½ tsp black pepper
  • 1 lemon halved
  • 4 garlic cloves smashed
  • 1 small bunch fresh parsley
  • 1 small onion quartered
  • 4 tbsp unsalted butter melted

Instructions

  • Preheat oven to 425°F (220°C). Pat the chicken dry with paper towels.
  • Prepare the seasoning: In a small bowl, mix olive oil, McCormick Garlic Powder, thyme, rosemary, paprika, salt, and black pepper. Rub the mixture all over the chicken, including under the skin.
  • Stuff the cavity: Fill the chicken cavity with lemon halves, smashed garlic cloves, fresh parsley, and onion quarters.
  • Roast the chicken: Place the chicken breast-side up in a roasting pan. Brush the chicken generously with melted butter. Roast for 1 hour and 20 minutes, or until a meat thermometer inserted into the thickest part of the breast reads 165°F.
  • Rest and serve: Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
  • Serve warm
