The holiday season is a time of joy, family gatherings, and, of course, delightful treats. Among the myriad of desserts that adorn our tables during this festive period, there's one that stands out for its vibrant color and exquisite taste – Rudolph's Red Velvet Cupcakes.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cocoa powder
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk at room temperature
  • 2 large eggs at room temperature
  • 2 tablespoons red food colouring
  • 1 teaspoon white vinegar
  • 1 teaspoon vanilla extract
  • Cream Cheese Frosting:
  • 1 pound cream cheese softened
  • 2 sticks butter softened
  • 1 teaspoon vanilla extract
  • 4 cups sifted confectioners' sugar
  • Garnishes:
  • Pretzel pieces for antlers
  • Red candies for noses

Instructions

  • Preheat Oven & Prepare Pans: Preheat your oven to 350 degrees F. Line cupcake pans with paper liners.
  • Mix Dry Ingredients: In a medium mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.
  • Combine Wet Ingredients: In a large bowl, gently beat together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla with a handheld electric mixer.
  • Combine Dry & Wet Mixtures: Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined.
  • Bake Cupcakes: Divide the batter evenly among the cupcake tins, filling each about 2/3 full. Bake for about 20-22 minutes, or until a toothpick inserted into the center of the cupcake comes out clean. Let cool.
  • Prepare Frosting: In a large mixing bowl, beat the cream cheese, butter, and vanilla together until smooth. Add the sugar and beat until creamy.
  • Decorate: Frost the cupcakes and decorate them with pretzels for antlers, a red candy for the nose, and edible eyes.
