Preheat Oven & Prepare Pans: Preheat your oven to 350 degrees F. Line cupcake pans with paper liners.
Mix Dry Ingredients: In a medium mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder.
Combine Wet Ingredients: In a large bowl, gently beat together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla with a handheld electric mixer.
Combine Dry & Wet Mixtures: Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined.
Bake Cupcakes: Divide the batter evenly among the cupcake tins, filling each about 2/3 full. Bake for about 20-22 minutes, or until a toothpick inserted into the center of the cupcake comes out clean. Let cool.
Prepare Frosting: In a large mixing bowl, beat the cream cheese, butter, and vanilla together until smooth. Add the sugar and beat until creamy.
Decorate: Frost the cupcakes and decorate them with pretzels for antlers, a red candy for the nose, and edible eyes.
