Ingredients

  • For the Filling:
  • 3 cups fresh strawberries hulled and halved
  • 2 cups fresh rhubarb chopped
  • 3/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • For the Topping:
  • 1 cup gluten-free all-purpose flour
  • 1/2 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter melted
  • 1/3 cup milk or dairy-free alternative

Instructions

  • Preheat your oven to 375°F (190°C). Grease a 9x9-inch baking dish.
  • In a large bowl, mix strawberries, rhubarb, sugar, cornstarch, and vanilla until evenly coated. Transfer to the prepared dish.
  • In another bowl, whisk together flour, sugar, baking powder, and salt. Stir in melted butter and milk until the batter is just combined.
  • Spoon the topping evenly over the fruit mixture. It’s fine if some fruit is visible.
  • Bake for 40-45 minutes or until the topping is golden brown and the fruit is bubbly.
  • Let cool for 10 minutes before serving. Enjoy with whipped cream or vanilla ice cream!
