Ingredients

  • 1 pound boneless skinless chicken breasts, cut into small pieces
  • 1 cup all-purpose flour
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 eggs beaten
  • 1 cup bread crumbs
  • Cooking oil for frying
  • 1/2 cup honey
  • 1/4 cup Dijon mustard
  • 2 tablespoons mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • 8 mini waffles store-bought or homemade

Instructions

  • In a shallow bowl, mix together the flour, garlic powder, paprika, salt, and pepper.
  • Place the beaten eggs in another shallow bowl and the bread crumbs in a third shallow bowl.
  • Dredge the chicken pieces in the seasoned flour, then dip them into the beaten eggs, and finally coat them with bread crumbs.
  • Heat cooking oil in a large skillet over medium-high heat. Fry the chicken pieces until golden brown and cooked through, about 3-4 minutes per side. Remove from skillet and place on a paper towel-lined plate to drain excess oil.
  • In a small bowl, whisk together the honey, Dijon mustard, mayonnaise, apple cider vinegar, and Worcestershire sauce to make the honey mustard sauce.
  • Toast the mini waffles according to package instructions or using a waffle maker if homemade.
  • Assemble the sliders by placing a piece of fried chicken on top of a mini waffle, drizzling with honey mustard sauce, and adding optional toppings if desired.
  • Secure each slider with a toothpick and serve immediately.
