Creamy Tomato Basil Soup with Grilled Cheese Dippers

When it comes to classic comfort food pairings, few combinations are as iconic – or as irresistible – as tomato soup and grilled cheese. But why settle for ordinary when you can elevate this beloved duo to new heights of deliciousness?

Equipment

  • Large pot, immersion blender or regular blender, skillet

Ingredients

  • 2 tablespoons olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 cans 28 ounces each crushed tomatoes
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh basil leaves chopped
  • Salt and pepper to taste
  • 4 slices bread
  • 4 slices cheddar cheese
  • Butter for grilling

Instructions

  • In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until softened and fragrant, about 5 minutes.
  • Pour in the crushed tomatoes and vegetable broth. Bring the mixture to a simmer and let it cook for 15-20 minutes, allowing the flavors to meld together.
  • Using an immersion blender or regular blender, blend the soup until smooth and creamy.
  • Stir in the heavy cream and chopped basil, and season with salt and pepper to taste. Let the soup simmer for an additional 5 minutes.
  • Meanwhile, prepare the grilled cheese dippers. Butter one side of each bread slice. Place a slice of cheddar cheese between two bread slices, buttered sides facing out.
  • Heat a skillet over medium heat. Place the assembled sandwiches in the skillet and cook until golden brown and crispy on both sides, and the cheese is melted.
  • Remove the sandwiches from the skillet and let them cool slightly before cutting them into strips or squares.
  • Serve the creamy tomato basil soup hot, garnished with additional fresh basil if desired, alongside the grilled cheese dippers for dipping.
