12ozelbow macaroni or pasta of choice
2cupsbutternut squashpeeled and diced
1cupmilkdairy or plant-based
1cupshredded sharp cheddar cheese
1/4cupgrated Parmesan cheese
1tablespoonbutter or olive oil
1/2teaspoongarlic powder
1/2teaspoonsmoked paprika
1/4teaspoonground nutmeg
Salt and pepper to taste
Optional toppings: fresh thymebreadcrumbs, or extra cheese
Instructions
Cook pasta according to package instructions. Drain and set aside.
Boil or steam the butternut squash until fork-tender, about 10-12 minutes.
Blend the cooked squash with milk, cheddar cheese, Parmesan cheese, butter, garlic powder, smoked paprika, nutmeg, salt, and pepper until smooth and creamy.
Return the pasta to the pot and pour the squash sauce over it. Stir to coat evenly.
Serve warm, garnished with fresh thyme and a sprinkle of breadcrumbs if desired.
