BBQ Chicken Quesadillas

Equipment

Ingredients

  • 2 cups cooked chicken shredded
  • 1/2 cup BBQ sauce
  • 2 cups shredded cheddar cheese
  • 4 large flour tortillas
  • 1/4 cup red onion thinly sliced
  • 2 tablespoons fresh cilantro chopped
  • 1 tablespoon olive oil or butter
  • Sour cream and salsa for serving

Instructions

  • In a bowl, mix shredded chicken with BBQ sauce until well coated.
  • Heat a skillet over medium heat. Brush one side of a tortilla with olive oil or butter. Place the tortilla, oiled side down, in the skillet.
  • Sprinkle 1/2 cup of shredded cheese evenly over one half of the tortilla. Add 1/2 cup of the BBQ chicken mixture, a few slices of red onion, and a sprinkle of cilantro.
  • Fold the tortilla in half to cover the filling. Cook for 2-3 minutes, or until the bottom is golden brown and the cheese begins to melt.
  • Flip the quesadilla and cook the other side for another 2-3 minutes.
  • Remove from skillet and let cool for a minute before slicing into triangles. Repeat with remaining tortillas and fillings.
  • Serve warm with sour cream and salsa on the side.
