Ingredients

  • 1 medium head of cauliflower cut into bite-sized florets
  • 1 cup gluten-free all-purpose flour
  • 1 cup unsweetened almond milk or any plant-based milk
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup gluten-free breadcrumbs
  • 1/2 cup hot sauce like Frank’s RedHot
  • 2 tbsp melted vegan butter or regular butter if not vegan
  • Cooking spray or oil for baking

Instructions

  • Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Prepare the batter: In a large bowl, whisk together the gluten-free flour, almond milk, garlic powder, smoked paprika, salt, and pepper until smooth.
  • Coat the cauliflower: Dip each cauliflower floret into the batter, letting excess drip off, then roll in gluten-free breadcrumbs until evenly coated. Place on the prepared baking sheet.
  • Bake: Lightly spray the cauliflower bites with cooking spray or drizzle with oil. Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
  • Make the buffalo sauce: In a small bowl, mix the hot sauce and melted butter.
  • Toss the bites: Once baked, toss the cauliflower bites in the buffalo sauce until fully coated. Return to the oven for 5 minutes to crisp up.
  • Serve: Enjoy warm with vegan ranch dressing, celery sticks, and carrot sticks on the side.
