  • 4 whole lobsters medium-sized
  • 3 tablespoons truffle butter
  • 1 onion finely chopped
  • 2 garlic cloves minced
  • 1 carrot chopped
  • 1 celery stalk chopped
  • 3 tablespoons brandy
  • 4 cups seafood stock
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh herbs for garnish
