Ingredients

  • 1 cup Arborio rice
  • 1 tablespoon olive oil
  • 1 small onion finely diced
  • 2 garlic cloves minced
  • 1/2 cup dry white wine
  • 4 cups chicken or vegetable stock warmed
  • 1 cup roasted red peppers pureed
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • Fresh basil leaves for garnish
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large pan over medium heat. Add onion and cook until softened, about 5 minutes.
