Ingredients
- 12 oz elbow macaroni or pasta of choice
- 2 cups butternut squash peeled and diced
- 1 cup milk dairy or plant-based
- 1 cup shredded sharp cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1 tablespoon butter or olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon ground nutmeg
- Salt and pepper to taste
- Optional toppings: fresh thyme breadcrumbs, or extra cheese
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Boil or steam the butternut squash until fork-tender, about 10-12 minutes.
- Blend the cooked squash with milk, cheddar cheese, Parmesan cheese, butter, garlic powder, smoked paprika, nutmeg, salt, and pepper until smooth and creamy.
- Return the pasta to the pot and pour the squash sauce over it. Stir to coat evenly.
- Serve warm, garnished with fresh thyme and a sprinkle of breadcrumbs if desired.
