BBQ Chicken Quesadillas

Ingredients
- 2 cups cooked chicken shredded
- 1/2 cup BBQ sauce
- 2 cups shredded cheddar cheese
- 4 large flour tortillas
- 1/4 cup red onion thinly sliced
- 2 tablespoons fresh cilantro chopped
- 1 tablespoon olive oil or butter
- Sour cream and salsa for serving
Instructions
- In a bowl, mix shredded chicken with BBQ sauce until well coated.
- Heat a skillet over medium heat. Brush one side of a tortilla with olive oil or butter. Place the tortilla, oiled side down, in the skillet.
- Sprinkle 1/2 cup of shredded cheese evenly over one half of the tortilla. Add 1/2 cup of the BBQ chicken mixture, a few slices of red onion, and a sprinkle of cilantro.
- Fold the tortilla in half to cover the filling. Cook for 2-3 minutes, or until the bottom is golden brown and the cheese begins to melt.
- Flip the quesadilla and cook the other side for another 2-3 minutes.
- Remove from skillet and let cool for a minute before slicing into triangles. Repeat with remaining tortillas and fillings.
- Serve warm with sour cream and salsa on the side.
