Battered Cauliflower Buffalo Bites

- 1 medium head of cauliflower cut into bite-sized florets
- 1 cup gluten-free all-purpose flour
- 1 cup unsweetened almond milk or any plant-based milk
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup gluten-free breadcrumbs
- 1/2 cup hot sauce like Frank’s RedHot
- 2 tbsp melted vegan butter or regular butter if not vegan
- Cooking spray or oil for baking
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Prepare the batter: In a large bowl, whisk together the gluten-free flour, almond milk, garlic powder, smoked paprika, salt, and pepper until smooth.
- Coat the cauliflower: Dip each cauliflower floret into the batter, letting excess drip off, then roll in gluten-free breadcrumbs until evenly coated. Place on the prepared baking sheet.
